OK, so every once in a while I’ll crave some good old fashioned Ukrainian prairie food. And, I can honestly say that in some cases it might be difficult to veganize and deglutenize some of the classic recipes I’ve made in the past.
I have my grandmother’s cabbage roll recipe, passed on to me by my mother. It is the best cabbage roll recipe I’ve ever used, and the best cabbage rolls I’ve tasted, putting many a baba to shame. The original recipe calls for ground beef and pork and raw long grained rice. The ratio of meat to rice is quite unbalanced with the meat taking center stage. So, obviously it’s not just a matter of omitting it. Some of the old ladies out in Saskatchewan would make rice-stuffed cabbage rolls with a tomato juice sauce. I don’t remember loving these cabbage rolls before, but I thought maybe I’d give it a try.
So, last week I made cabbage rolls. All that hard work for naught. They turned out terrible. Then usually where cabbage rolls are better the 2nd day, these were actually worse – if that’s even possible! So bad, that I had to throw them out. Poor poor cabbage rolls.
The perogie recipe I have was one that I learned from watching and doing with my other family…the Polish family I basically grew up with. My best friend is Polish and I’d stay with their family almost every night, we were that close growing up. Saturday morning would roll around and after a stop at the grocery store for a giant bag of potatoes and a giant block of cheddar cheese, the rest of the morning was spent peeling potatoes and grating cheese. Finally when it was time to fill the perogies we were bored and just wanted to eat them. I don’t want to mess with this recipe at all, but lately I’ve been craving them. I am worried that if I attempt a GF vegan variety I’ll just feel dirty.
I looked high and low all over the interweb for a good cabbage roll recipe and it bombed. I don’t have the time/energy to do the same with a perogie recipe. So, if anyone can suggest a good vegan and gluten-free recipe for either that they’ve tested themselves with good results, then please share. Thanks!
