It seems like it would be pointless to post an easy recipe like rice krispy squares on the blog. But, these aren’t really your standard squares. Every single ingredient is a specialty ingredient … though the end result is very much the same.
Margarine is substituted with Earth Balance. Regular Kellogg’s Rice Krispies are substituted with a gluten-free variety, because the name brand stuff contains barley malt. And marshmallows, which are not usually vegan, can be substituted with a vegan variety.
Vegan and Gluten-Free Rice Krispy Squares
- 1/2 cup Earth Balance
- 60 marshmallows
- 1 tsp vanilla extract
- 5-6 cups rice krispy cereal
Melt Earth Balance in a large pot over med-low heat. Add marshmallows and stir constantly while they melt. Once melted add vanilla extract and stir quickly. Remove from heat and stir in rice krispy cereal. Mix well and press into a 11 x 7 greased baking dish.
Let cool before cutting into squares and serving.
Marshmallows are not vegan.

Keep in mind too that this post is nearly 4 years old and the comment I made about Rice Krispies might not even be valid anymore since there’s gluten-free Rice Krispies. But I guess things in the food world do change in 4 years.
