I wrote about basic nut creams and cheeses a while ago and promised to deliver a nut cheese recipe. This one is less of a cheese (because it’s not left to ferment at all) and more of a nut pâté. It’s savory and it’s my favorite version of nut-anything to eat.
Savory Macadamia Nut 'Cheese'
Ingredients
- 1 cup raw unsalted macadamia nuts
- 1-2 cloves garlic
- ¼ cup fresh parsley
- 2-3 tablespoons lemon juice
- Salt & pepper, to taste
- Water, as needed
Instructions
- Place nuts in a food processor work bowl. Pulse until fairly smooth.
- Add garlic, parsley, salt & pepper, and lemon juice. Pulse to evenly combine.
- Add water if necessary to help thin it out and form a nice smooth paste.
- Chill and serve on crackers or use for any of your favorite recipes ... like Tofu Korma.
Macadamia nuts are so delicious! I bet this cheese is amazing!
I had some leftover tonight and spread it on some gluten-free multigrain crackers as a snack. So, so, so good!
