Lemon Dill Vinaigrette

I don’t share enough salad dressing recipes here. I made a quinoa salad a while back that used this dressing and shared a quick snap on Instagram. I had a couple people asking for the salad recipe but I figured what really was important was the dressing recipe, so that’s what I’m sharing here. You could make any kind of quinoa or green salad and have this lemon dill vinaigrette over top and it’d be super tasty.

So in light of keeping it simple. Here’s a quick pic and the recipe. I hope you enjoy it.

In this particular salad above I put fresh avocado, Cara Cara orange supremes, crunchy red pepper in with cooked quinoa. Just, yum!

Oh and I have to mention the dark green kale in that picture is this amazing recipe from The Gourmet Housewife that I am still (embarrassingly) addicted to. I ate a whole batch to myself when Levi was out of town, then I made a double batch and ate it for an early lunch and then a late afternoon snack the very next day. Then when Levi came home I made it so he could tell me how awesome it was too. I almost made it again the night after this quinoa salad picture but I refrained. I don’t want to get sick of it or anything. Ha! As if that’s going to happen.
