Wilcox's Peanut Butter Cookies

A delicious combination of chewy and crispy in the perfect peanut butter cookie - that's gluten free!
  • 1 cup smooth peanut butter
  • 1 cup margarine, softened
  • 1 cup brown sugar, packed
  • 1 cup white sugar
  • 2 eggs, preferably pastured
  • 2¼ cups superfine brown rice flour
  • ¼ cup cornstarch
  • 1 teaspoon xanthan or guar gum
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  1. Preheat oven to 350ºF. Line a baking sheet with parchment paper.
  2. In a large bowl, combine peanut butter, margarine, brown sugar and white sugar. Add eggs and beat until smooth.
  3. Sift together brown rice flour, cornstarch, xanthan (or guar) gum, baking soda, baking powder and salt. Add dry ingredients to wet ingredients and mix well to combine.
  4. Roll into 1" balls and flatten gently with a fork.
  5. Bake in preheated oven for 8-10 minutes, until just very lightly brown. Remove and let cool slightly on pan before transferring to a cooling rack.
