Ginger Pear Marmalade
  • 8 ripe pears, peeled and cored
  • 4 Granny Smith apples, peeled and cored
  • 2 large limes, peel on and seeds removed
  • ¾ cup ginger, peeled and chopped
  • 8 cups granulated sugar
  • 3½ cups water
  1. Chop up pears and apples.
  2. Place quartered limes with peel still on in food processor. Pulse until finely minced and any pieces of peel are small.
  3. In a large stock pot or Dutch oven, combine fruit, lime, chopped ginger, sugar and water.
  4. Over medium heat, bring the mixture to a slight boil. Reduce heat to minimum and cook slowly until the mixture thickens and is of marmalade consistency.
  5. Pour into sterilized jelly jars, wipe rims, and seal. Process in a boiling water bath for 10 minutes. Remove from canner and cover with tea towel to let cool slowly.
