Balsamic-Sauteed Chard and Lentils du Puy
  • ½ cup dried lentilles du Puy
  • 2 cups water
  • 1 bunch Swiss chard, ribs and stems removed
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 tablespoons balsamic vinegar
  • Salt & pepper
  1. Rinse lentils and place in a saucepan with water. Bring to a boil. Reduce heat and simmer for 30 minutes until lentils are tender. Drain and rinse.
  2. In a skillet, heat olive oil.
  3. Saute onion and garlic for 3 minutes, until they begin to soften.
  4. Add cooked lentils and chard. Saute 3 more minutes until chard begins to wilt.
  5. Add balsamic vinegar, salt and pepper. Combine.
  6. Serve hot.
