Herb & Garlic Lentil Crackers

These lentil crackers are sure to please at any party. Serve with homemade hummus or macadamia nut cheese spread.
  • ½ cup finely ground lentil flour (such as Cuisine Soleil brand)
  • ¾ cup almond meal
  • 1½ teaspoons garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt-free herb seasoning (such as Mrs. Dash)
  • ½ teaspoon sea salt
  • 2 tablespoons ground flax
  • 1 tablespoon nutritional yeast
  • 2 tablespoons sesame seeds
  • ¼ teaspoon baking soda
  • ¼ cup water
  • ½ teaspoon olive oil
  1. Preheat oven to 350°F.
  2. In a bowl combine all dry ingredients and mix well.
  3. Add water and olive oil. Stir to combine.
  4. Turn dough out onto a sheet of parchment paper.
  5. Knead dough with hands until a smooth ball forms.
  6. Roll out on parchment as thin as possible without dough tearing.
  7. Slide rolled out dough on parchment to a baking sheet.
  8. Use a pizza cutter to trim off any edges that may overlap edge of baking sheet. Carefully move those edge bits to another part of the baking sheet. Cut the remaining dough into nice squares about 1 inch by 1 inch.
  9. Bake in preheated oven for 22 minutes until nicely browned and crisp.
  10. Remove from oven and let cool on baking sheet for 10 minutes before serving or storing in an airtight container.
