Maple Dijon Roasted Brussels Sprouts

The combination of tasty mustards and maple syrup make a wonderful dressing for roasted Brussels sprouts.
  • 2 lbs brussels sprouts, trimmed and halved
  • ½ large red onion, sliced thinly
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup maple syrup
  • 1 tablespoon good quality dijon mustard
  • 1 teaspoon extra-grainy (preferably whole grain) mustard
  • Pinch salt
  1. Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  2. Place trimmed and halved brussels sprouts, sliced red onion and minced garlic on baking sheet. Drizzle with olive oil, season with salt and pepper and toss to coat.
  3. Roast in preheated oven for 35 minutes, until lightly browned and tender.
  4. In a small bowl whisk together maple syrup and mustards. Taste and add a pinch of salt, if needed.
  5. Transfer roasted brussels sprouts to a serving dish, drizzle with dressing and toss to coat. Serve hot.
