Banana Bread {gluten free, dairy free, vegan option}

A simple and delicious banana bread recipe that's totally gluten free, dairy free and has a vegan option, too.
  • 4 medium-sized ripe bananas, mashed
  • 1 cup brown sugar
  • 4 tablespoons oil
  • 1 egg (see notes for vegan option)
  • 1 cup brown rice flour
  • ½ cup cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon xanthan gum
  • ¼ - ½ cup add-ins like chocolate chips, chopped walnuts, dried fruit, etc. (optional)
  1. Preheat oven to 325ºF. Line a loaf pan with parchment paper.
  2. In a large bowl whisk brown sugar, oil and egg (or egg replacer) until the mixture is fluffy.
  3. Add brown rice flour, cornstarch, baking soda, baking powder, salt and xanthan gum. Stir to combine. Mixture will be very dry and crumbly at this point.
  4. Add in mashed ripe bananas and mix well to combine, scraping the sides of the bowl as you go.
  5. Mix in any desired chopped nuts, chocolate chips, dried fruit, etc. (optional)
  6. Scrape batter into prepared loaf pan and bake in preheated oven for 70 minutes or until tested for doneness. (If you add in extra goodies, baking time might be extended by a few minutes. Keep checking.)
1 egg = 2 teaspoons powdered egg replacer + 2 tablespoons water
